I'm a big fan of rice in all forms. Chicken and Rice, rice soup, risotto, flavoured rices (Mexican Red Rice is a business firm favourite along with Mushroom Rice!), Arancini balls.
In fact, I'm yet to run into a rice dish that I don't like!!

PS Foodie translation: Ground beef = beefiness mince, though I've noticed some butchers in Commonwealth of australia nowadays are starting to call it footing beef.
PPS This recipe will work well with any footing / mince meat. Pork, chicken, turkey, even lamb.

Recipe video above. Ground beef cooked with seasoned rice and plenty of veggies - kind of similar a pilaf or fried rice! This dish is non spicy - the cayenne pepper just adds a impact of warmth, not spiciness.
- 2 tbsp olive oil
- 1 onion , diced (any blazon)
- one red capsicum / bong pepper , diced (big)
- 2 garlic cloves , minced
- 500g (ane lb) ground beef (mince) , lean
- 2 1/ii tbsp love apple paste
- 1 i/4 tsp table salt
- 1/2 tsp EACH cumin, black pepper
- 1 tsp each onion powder, dried oregano (or other herb of pick)
- ane/four tsp cayenne pepper (optional)
- 1 stale bay leaf
- one ane/iv cups (225g) long grain white rice , uncooked (Note ane)
- 2 cups (500 ml) beefiness broth , depression sodium
- 2 cups (300g) diced frozen veggies , I used corn, pea, carrot mix (Note 2)
- 3 big handfuls baby spinach (~ 90g/three oz) , or other leafy greens (Annotation 3)

Heat oil in large pot over high heat. Add onion, capsicum and garlic. Cook for 1 minute.

Add beef, cook until chocolate-brown, breaking it upwardly every bit you go.

Add lycopersicon esculentum paste, table salt, pepper, onion powder, oregano, cumin and cayenne pepper. Cook for one minute.

Turn heat down to medium. Add rice and beefiness broth, mix well. Add frozen veggies and bay leaf, then stir.

Not yet tested with quinoa or other rice subs!
2. IMPORTANT: Y'all can sub the frozen with more chopped fresh veggies. But if you opt to use fresh instead of frozen veggies, add i/4 loving cup of water to the rice (frozen veg adds water as it melts).
3. LEAFY GREENS: This can be substituted with any leafy greens that wilts quite easily. Information technology will even work with torn kale (remove from the stems) or leafy function of Asian greens. Roughly chop, then use per recipe. PS Asian greens don't sense of taste "Asiany"!
4. RICE FIRMNESS: This recipe makes al dente fluffy rice (ie tender and fluffy). If you similar your rice softer, add 1/4 cup of h2o to the rice.
